I bought a lug of peaches and am madly working to get them peeled and cut up before they spoil. I added a little thyme to the fruit before pouring it it into the crust. Please oh please tell me you get the reference to that ubiquitous song from the late 70's. I believe it replaced the Carpenters' We've Only Just Begun in the wedding DJ portfolio. It was running through my head all morning as I made the filling.

Why the thyme? I've never heard of that. Those pies look awesome. My peach tree is loaded this year and I believe in about a week, they should be ripe. I just need to get them before the deer do!
I generally have a bumper crop of herbs growing and have been inspired by a couple baking-themed blogs I stalk. I throw mint into fruit bowls and found thyme is good with peaches. Next time you have a nice, fragrant peach in your hand, sniff some basil with it. You'll see what I mean ... some things you never considered just work together.
